The"What I am Loving" List

I cannot begin to even describe how exhausted I am at this very moment.

This weekend has been fully of activities, all amazing mind you, but exhausting. And although my body hurts and I am currently nursing about 40 bug bites (no joke) there are some things that I am super excited about that I just must share:

1. The Marriage of Steve and Liana Pipitali
Two of the most amazing people you will ever meet decided, "Hey, we both are the most wonderful, caring and loyal people on the planet. We should get married and produce mass amounts of smaller wonerful, caring and loyal people." And that's just what they did. The wedding was amazing. Gorgeous view looking over the Chesapeake Bay as they said their vows and then we all partied down until the wee hours. My body is still in pain from constantly dancing and jumping. Tip: Don't want to feel guilty about an open bar and mass quantities of phenominal finger foods (aka mini crabcake appitizers)? Dance your butt off the whole night! I am seriously so happy for them both, and they deserve the world!

2. The Engagement of My Cousin!
So, in keeping with the whole wedding theme, my cousin surprised us all with the announcement that he would be marrying his girlfriend Lulu this summer! In Meixco!!!!! They both flew here to tell us in person, and this was the first time any of us had met Lulu, but it seems like she will fit right into the family! Just hope she knows what kind of family she is marrying into!

I am already so proud of my cousin for joining the peace corps, and I couldn't be more proud of who he has chosen to spend his life with! Congrats guys!

3. Edgewater Restaurant
This is a restaurant in the town of Edgewater, and yes its actual name is Edgewater Restaurant. Jake's parents took us out for his 25th birthday (which was on Friday) last night to this hole in the wall place, and do not let your first impression of the place fool you. As soon as you walk-in, all you can smell is fresh seafood. Now for all you landlocked people out there, the smell of fresh seafood does not actually smell like fish. Anytime seafood smells like fish, run away...fast. It is not fresh. Fresh seafood smells sweet, and buttery with a hint of lemon, as it should. We enjoyed some locally brewed beer as we waited for our table, and were escorted to our table within a matter of minutes. You can tell by the condition of the bar, the walls and the tables that this place has a ton of history, and they like it that way.

We took a quick peak at the menu and pretty much decided within 5 minutes we all wanted something that came with a crabcake, and boy did we make the right decision.

Let me preface this by saying I am born and raised in Maryland. Spent almost my entire life here (minus college in Ohio) and I have eaten a lot of crabcakes... a lot. This is by far one of the best that I have ever had in my entire life. Every Marylander out there reading is probably thinking, "Nooo, this place in Baltimore is amazing....". No, you are wrong. This is the best crabcake... ever.

I sadly did not take a picture of this amazing gift from God, but this picture above is from their website. It doesn't do this thing justice. It was about the size of a grapefruit with chunks of crab the size of a babies fist, and there was almost zero filler.

Person not from Maryland: "Kristin, what is filler?"
Kristin: "I am glad you asked. Filler is made of the breadcrumbs, mayo and other sticky stuff that restaurants use to keep the crab together. You can find mass amounts of it in places like TGI Fridays, Chili's and pretty much any other chain restaurant. This is a necessary part of the crabcake, but the best crabcakes have very little filler. Once again little filler=good  Tons of filler= you shouldn't be eating that crabcake anyway."

I am taking everyone and their mom to this restaurant when they visit me.

So yes, I am about to pass out sitting in my chair at this moment, but I am so very excited about these things right now, that they are keeping me going!

The "Last Day on Earth" List

Yup, that's right.. the world is supposively ending tomorrow... at least for all those "non sinners" out there.

As I ponder this current event, I wonder to myself, "if today was really my last day on earth, what would I do?"

1. Eat: I would literally eat my way around the world. Huge cheesy chimichangas and strong margaritas for Mexico,  and massive amount of mozzarella cheese, olive oil and garlic for Italy. Brats, sauerkrout, pretzels and mustard for my German side. Chocolate, chocloate, chocolate!!!!!! I would eat sushi until I had rice coming out my nose. And then to top it all off I would make the best sandwich this place has ever seen... Huge subroll, turkey, lettuce, tomato, avocado, honey mustard, pepper jack cheese all toasted together. Omg, I might need to make that happen today, you know, just incase...

2. Go bungee jumping or skydiving..or both!
I mean, if I croaked... at least I wouldn't have to sit (run like a maniac) through the fire and brimstone display, I could just watch from above!

3. Go swimming
This seems so simple, but I absolutely looooove swimming. I should have been a fish! Something about the feeling of being weightless in the water and the way it feels on your skin when it is 1,000 degrees outside. Memorial day isn't until after the world ends, so I guess the Chesapeake Bay will do. I mean, I wouldn't have to worry about getting a flesh eating disease or anything since I would be gone tomorrow!!!

4. Go on a balloon ride
I mean, come on. Those things are awesome. Who wouldn't want to do this?
5. Get a Tattoo
There is no regret right? Hmmm what would I get.... butterfly? Standard flower? barbed wire? Tribal tattoo? Or maybe I could score some early points with the big guy and just get a huge cross? Winner...
6. Watch my top 5 movies on my top 10 list
I couldn't die knowing that I never saw the top 5 movies of all time!!!!!!!!!!! What would I say to Jusy Garland, Frank Sinatra, Paul Newman, Humphrey Bogart, Audrey Hepburn.... I would be shunned!!!

So, how will I actually be spending my last day on earth? (Assuming ya know I qualify for the rapture.. which is questionable.) I am doing what almost everyone else on earth is doing, working. I will be working a fundraiser tonight and celebrating Jake's birthday on the side.

Tomorrow? Depending on what time this all goes down I could be curling my hair, drinking sangria, taking massive amounts of photos, stuffing my face with crabcakes (phenominal fingerfood), or dancing to "Dance Until the World Ends". Yes, I will be celebrating life and love at a wedding between two of my favorite people int he world... I say that's a pretty great way to go!

1. Pinterest
Haven't heard of it? You need to rectify that immediately. This website is awesome. Basically you can pin images of things you love to different "inspiration boards" that you create on the website. You can then share your boards with others and see what other people are pinning! It is awesome if you are planning a wedding, a birthday, decorating a house... anything you see on a site can be pinned!

2. Greek Yogurt
I have finally given into the fad... and am LOVING IT! Honestly it is awesome. I buy all different brands and flavors, but my favorite is Chobani plain. I mix it with fresh shopped fruit and granola in the morning and it is soooooo good! It is also super healthy for you!

3. Bulldogs
Um duh. Is this even a question? I have been seeing them everywhere.... We went to a friend of a friend's house where they had a bulldog puppy and I almost died.. In love.

4. Springtime!
I am seriously obsessed with springtime. I never really realized it until this year. The weather is absolutely beautiful, you know before Maryland turns into a swamp and humidity nightmare. The birds are chirping, the flowers are blooming and it is light outside until 7:45pm!!!!!

Loving it.

The "25 Things" List

I found this list from one of my fellow bloggers, and I had to share it with you. Jenna from Eat, Live, Run posted a "25 Things I Know to be True" list. She highlighted 25 things that she has learned during her (almost) 25 years on this earth. I found myself nodding and agreeing with some that I thought I would share.

2. Everything tastes better when your mom makes it.- I would add Grandma to this too. I make the recipes they give me, but there is just always something missing...
4. Being skinny will never make you happy.- loving your body enough to feel healthy will make you happy, not dreaming about being a certain weight.
5. Always wear your sunscreen.- My family learned this the hard way when my father was diagnosed with skin cancer on his nose. Thankfully it was removed and has not returned but we are all careful.
6. If a guy really wants to be with you, he will make a way for it to happen.- learned this one first hand
8. Nothing in the world is more important than having faith.-Faith in god, faith in your friends and family or faith in yourself... you just gotta have faith.
22. Travel whenever you can.- Amen
25. I’d rather make less money and do what I love than make bank and be miserable every day.-I knew that by entering the environmental field there wouldn't be a ton of money to be had, and I am completely fine with that because it is what I love.

The "Perks of Eating Veggie" List

Now I am not going to get on a soap box and tell you how everyone should be a vegetarian because of this reason or that. There are so many great reasons to eat veggie, and arguments for and against on either side.

For me, I have noticed a lot of great perks to eating less meat over the course of the past 3 months, and I would like to share them with you!

  1. I have more energy: Literally, I get home from 8 hours of work and have the urge to go kayaking or actually want to work out. During the work day, I don't feel like I need to be constantly inhaling caffeine either.  I really didn't notice it until recently. I could also chalk this one up to the fact that it is lighter out later now, but I really think this has something to do with the veggie food.
  2. I feel healthier: Its not just the energy, its feeling rejuvenated. My skin feels better, my hair and nails look stronger. My body feels like it can do more.
  3. Weight control: I have found that when it comes to watching my waistline, eating veggie has helped! I feel lighter, which is great since bikini season is on the horizon.
  4. I have more money: Meat is expensive!!!! I can't even tell you how many meals I have made that are under $10. (I should start noting that).

I would like to note, that although I do feel great benefits from eating less meat, I really, really love hamburgers, bratwurst, chicken sandwiches... the list goes on. So there is no way I would probably ever have the self control to completely be vegetarian, but I do enjoy how I am balancing the two now. Aka, don't judge me if you see me eating buffalo wings....
