I decided on this meal in the morning while I was cutting tomato slices for my salad. I realized, once again, I had nothing planned for dinner. Then I thought, "I will have leftover tomato". Then I thought, "I have parmesan cheese". Parmesan tomatoes it is!
Couple slices of tomato
Grated Parmesan cheese
Dried Basil and/or Oregano
Salt and Pepper
Olive oil
Slice tomato relatively thick and drizzle EVOO on top. Sprinkle on salt, pepper, basil and oregano. Grate Parmesan cheese right on top to your liking. Bake in 420 oven for 10-15 min or until top is crispy. Serve over cooked pasta.
