Spread 1 tablespoon of the cheese filling on one end of the eggplant and roll it up. Note: Do not use more than 1 tablespoon! Goat cheese is suuuper rich, so trust me, 1 tablespoon is all you will need!
I would probably make this again, but with some slight changes in the filling, and maybe not forget the orange. Poor orange..
