I also blame the fact that I haven't found a new recipe in forever that I want to try. So please, send any my way!
So the fact that I have no motivation and haven't really got back in the swing of cooking things, I came up with this dish:
So first off I cooked up a couple cloves of garlic in 2 tablespoons of olive oil. I then added the sun-dried tomatoes to let them soak up some of that oil and soften up.
So there it is, another "What I Could Find in my Fridge" pasta, that actually turned out really well! The capers and lemon made it fresh and light, and the mushrooms and sun-dried tomatoes were filling.
Mushroom Sun-Dried Tomato Pasta
Serves 1 (totally makes me sound like a lonely weirdo)
2 TB olive oil
Garlic (to preference)
1/2 TB butter (optional)
3 sliced mushrooms
1/2 cup sun-dried tomatoes, sliced
1/2 lemon (make yours a fresh one)
1/2 TB capers1 cup of dried pasta
Sautee garlic in butter and olive oil. Toss in the sun-dried tomatoes until the start to soften up. Add in the mushrooms and continue to sautee. Once they start to soften, add in the capers and lemon juice. Once the pasta is cooked, toss it in with the vegetables. Serve with shredded parmesan cheese and enjoy!
