Well I didn't. Guilty. But that doesn't mean I didn't have two veggie meals. I just ate them out because I had zero time to grocery shop and therefore ate almost every meal as take out. Needless to say my pocketbook hates me right now but its fine.
Moving on.... to this weeks meal! It comes from a posting on Simply Recipes... and it is another Springtime Minestrone! You may remember this fun little concoction that had awesome alphabet noodles. Well here is another take on a great light spring dinner!
Oh my... and I almost forgot!!!!
Add the diced tomatoes and vegetable stock and bring to a simmer. Add salt to taste and then cover and cook on low for 10 minutes.
While that simmered, I chopped the rest of the vegetables:
Now, add the asparagus and cook for 2 minutes uncovered, and then add the green onions and cook for a minute.
Don't worry, I didn't forget the pesto. I wish I could have used my own homemade... but my basil plant is still in the baby stages.. but this store bought one was actually pretty great! Take the soup off the stove and add a 1/4 cup and stir up.
