This recipe I came upon while following one of my favorite bloggers, Eat. Live. Run. Seriously, she posts the most amazing recipes, including this delicious soup that she likes to refer to as " asian chicken noodle soup" and I couldn't agree more!
I had half of my rice noodles left over from making my Thai Coconut Curry soup the week before and was suffering from a cold, and thought this would be the perfect remedy for both of these problems!
Like I have said, I love being able to use ingredients more than once and avoid a large grocery bill every week. More $$ for beer, wine and clothes! :)
So I already had the noodles, had some frozen chicken in the freezer (a must for any kitchen; you never know when you will need some!) I also already had some green onions leftover from the coconut soup so all I needed was bok choy, a jalapeno and some chicken broth (something else you should always have on hand!).

I also had from previous recipes soy sauce, garlic, white wine vinegar and sesame oil. These are ingredients you may or may not have in your pantry, but things you will accumulate as you start cooking more and more and you will find recipes that call for em!
