You will quickly learn on this blog that I am a huge fan of making something in large batches and then either freezing the dish for a lazy day or eating said dish all week for lunch at work. Well, not all week but you get the picture.

| Mainly because it is so easy and uses ingredients that are unique and fun, but won't break the bank. And best of all, they can be used again. For instance, the Thai Curry paste is something you may have never used before, but as you start making more interesting recipes, you will see it pop up! You can also get creative with it in your own recipes. You can also omit certain ingredients. This most recent time I made the dish, I was unable to find lemongrass, which is usually with the other prepackaged fresh herbs in the produce section. So, I just omitted it and it turned out just fine. |
The other great thing about this recipe is that many of the ingredients I will be using again to make a different dish to have for lunch this week!
