Yes my friends, I made my first attempt at tofu last week, and before I get into it I will say that I was slightly terrified. Something about tofu terrifies me, like I think it does most people. Possibly because people fear what they are not familiar with, which I think is my issue. I think consistency is also an issue for me. I think I pictured it being slimy and gross with a taste of moldy cheese. In reality, tofu, at least extra firm, is not slimy or gross at all!

I was ecstatic when I saw this recipe from one of my favorite bloggers, Jenna from Eat, Live, Run. She always posts the most delicious foods! I wish I was as creative, but I don't think I could have come up with this recipe on my own at all.
Mainly because of this ingredient. Do not be afraid my friends, let yourself be open to the possibilities! I promise you won't regret it! I will make one suggestion though. Marinate the tofu in a little of the dishes extra dressing for more flavor!
