You may remember when I made this awesome Corona Pulled Pork recipe. Seriously, it was one of my favorites, and not just because I came up with the idea. I swear :)
But I have to say, I wasn't sure how to handle the leftovers. I mean, yes I could eat pork tacos for the next 5 days, but really? Let's change it up, but not too much. So what is something easy to pack that would make a great lunch? Taquitos!

You may recognize some of the ingredients from before, like the quesa fresca and tortillas, and of course the left over pulled pork. However there is something new in the mix that was a one time purchase I thought I would never use again, jarred jalapeno slices. It was something I had bought for one of our raclette nights, and was somewhat irritated at the thought I would probably never use these again. Um, wrong. I have used them for last minute quesadillas, nachos, on sandwiches and now these taquitos! They are great because they are not overly spicy, but provide a great kick to any dish. |
So the recipe is pretty simple. Take your taco shell and lay a bit of the leftover pulled pork in the middle. Add your cheese, in my case the quesa fresca, and jarred jalapenos but you could add whatever you like. (I would avoid anything that holds a lot of liquid so the taquitos don't get mushy when cooking). Then roll up the taquito. Spray a baking sheet with cooking spray or make sure it is non stick, and lay the taquitos on the tray. Spray the tops of the taquitos with the spray for a nice crispy shell after baking. I baked them at 350 for about 15 min, but times may vary. I also took the out half way through and flipped em for even crisping.
So simple. So delicious. And your friends will start calling you Sandra Lee from Semi-Homemade. Serve them up hot with guacamole, sour cream, salsa or whatever tickles your fancy. I brought them with me to work for lunch and they were awesome.
