Tuesday's Jake usually comes over to not watch Glee (ok he watches glee and new girl) and I make dinner. So what to make, what to make? Um Greek pasta? Yup!
So I had the feta, and the olives from may salad leftover, I had garlic and tomatoes as well as some jarred roasted red peppers that were leftover from a BBQ we had last weekend.
I chopped up the olives, red peppers and garlic, and I ended up leaving out the tomato, but you are more than welcome to add it! I also used a couple of chicken breasts I had in the fridge that I chopped up. Jake, while he appreciates good tasting vegetarian food, needs some protein in his meals :)
Easy Peasy Greek Pasta
2 T EVOO
2 t chopped garlic (or whatever makes you happy)
2 chicken breasts cut into bite size pieces
1/4 cup of chopped kalamata olives
1/4 cup of chopped roasted red peppers
2 T basil
2 T lemon basil or fresh lemon juice
1/4 cup of white wine (or a little more :) )
4 oz of pasta
1/4 of reserved pasta water
Heat EVOO in a skillet over medium heat and add chopped garlic. Cook for 1 minute and then add chicken. Cook for about 3-4 minutes until outside of chicken is completely white. Add olives and red peppers and cook for about 2 minutes and add white wine. Add in the herbs and mix together well and let cook for 3 minutes. Add cooked pasta with 1/4 cup of cooking water and mix together. Plate and sprinkle with feta cheese. Enjoy!
