I recently made the homemade pho recipe from Jenna at Eat, Live, Run for lunch all this week. But that was an oldie but goodie.
So this week I tried to do something a little different with something I normally eat. Almost every morning I have a smoothie or overnight oats with great yogurt for breakfast. Blueberry, blackberry, strawberry, mango... you name it I have tried it. So recently I began seeing a new pumpkin smoothie pop up on Pinterest, and knew that I just had to try it. I made it the recommended way the first time:
1/2 banana, 1/3 cup pumpkin puree, 1/3 cup plain Greek yogurt (can also sub soy yogurt) , 3/4 cup vanilla almond milk (or vanilla soy milk), few shakes of pumpkin pie spice, 4-5 ice cubes. Mix in blender until smooth.
It was good, but I felt like something was missing. So after a little research and some thinking, I came up with this AMAZING recipe that definitely makes you think you are eating a pumpkin pie! Not to mention it is super healthy. Pumpkin is a great source of beta-carotine (vitamin A) which has shown to help prevent cancer and other diseases. It also has tons of vitamin C, E and fiber. I obviously had to drink this in my beer release glass!
1 banana (peeled, chopped, frozen the night before)
3 oz greek yogurt (half an individual package)
1/3 cup pumpkin puree
1 cup almond milk (can use regular, soy etc.)
1 graham cracker (broken up before placing in blender)
1/2-1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon clove
Add all ingredients starting with the bananas to the blender. Mix until smooth. Add more spice to taste!
