So that is exactly what I did last week with this great Thai Coconut curry soup. This is something I have made and posted on the blog before, but I really highly recommend it!

Mainly because it is so easy and uses ingredients that are unique and fun, but won't break the bank. And best of all, they can be used again.
For instance, the Thai Curry paste is something you may have never used before, but as you start making more interesting recipes, you will see it pop up! You can also get creative with it in your own recipes.
You can also omit certain ingredients. This most recent time I made the dish, I was unable to find lemongrass, which is usually with the other prepackaged fresh herbs in the produce section. So, I just omitted it and it turned out just fine.
