I was trying to come up with a recipe to make for my monthly dinner I am responsible for with Abby, Jake and Nixon. (We rotate every week, and one person makes dinner.) I was thinking about what would be fun and i suddenly thought of tacos. Then I thought of pork. Then I thought of pork cooked in beer. Then I thought what if the beer was Corona? I have cooked beer in many kinds of liquid, including your standard Miller to a Dr. Pepper; so I figured, why not Corona? Little mexican twist for Cinco de Mayo right?

What you have here are your standard Mexican spices: cumin, cayenne, garlic. Then some oregano, salt and pleeenty of limes. Corona without lime? Blasphemy!
Mix all them spices together with the juice from a few limes and then pour over your pork butt (shoulder, but I like calling it pork butt better :) ) in a crock pot.
Then you are going to want to pour about 2 bottles of Corona into the crock pot. Have I mentioned how much I love Corona? I really do. Beer of choice in the summer for sure. *burp*
Then you just set it... and forget it! Let it cook for about 7 hours in the crock pot and get all nice and bubbly. Then take out the pork, it should be falling apart by this point, and use two forks to shred the meat. Then place it back in the juices on warm so the insides can get all nice and marinated.
I served this baby on a soft taco shell with cut up avocado, tomato, quesa fresca and cilantro on top. Oh man, was it ever good! And of course a Corona on the side...
Seriously though, this needs to be on your list of things to try!... Happy Cinco de Mayo!

serves 4-6
4 pd pork shoulder (butt) bone in
Juice from about 3 limes
2 TB of chilli powder
2 garlic cloves shopped
2 tsp cumin
2 tsp oregano
2 tsp salt
16 oz of Corona (2 beers is fine)
Your choice of tortilla and toppings
Place the pork shoulder in a crock pot. Mix together the lime juice, chili powder, garlic, cumin, oregano and salt. Pour over pork into crock pot. Add 2 bottles of Corona. (Optional: I also added a couple of lime slices into the liquid to enhance the lime flavor. Just make sure you fish them out before serving!)
Cook for 7 hours on low in the crock pot. Remove meat and bone and pull apart with two forks. Put shredded meat back into the crock pot and let it sit on warm until ready to serve.
It went really well with avocado, tomatoes, cilantro and quesa fresca!
