It is spring. Did you know that? It is March and it is spring. Which means it is time for recipes to change. It is almost swimsuit season after all! (Hush, don't speak of such things...)
So I decided that it was time to dig up my old stand-by recipe, Springtime Minestrone. This recipe is one that I found while I was eating 2 vegetarian dinners a week last year, and something that stuck out as healthy, light and filling.
There are so many different vegetables in this soup, including potatoes, peas, kale, tomatoes, chickpeas and more. It makes the perfect dish to welcome in the new season!
