Last week she shared this amazing dish for Thai Coconut Curry Soup that she had made, and could not stop eating! So, obviously, I had to give it a shot myself...
I had never cooked with coconut milk, curry paste, lemongrass, cilantro roots, or fish sauce before, so I thought this would be a great bucket list item to add!

Well this time I decided to be a responsible cook and prep my food before I started cooking! I have to say it was refreshing and made life much easier.
And then I decided I would try to grate baby carrots with my cheese grater. DO NOT ATTEMPT THIS! BUY THE LARGE CARROT BAG AT THE STORE, EVEN IF YOU ONLY NEED ONE. Or suffer my same fate...
Anyways, once your food is prepped, you will mix the coconut cream with the curry paste. Now, this may look like something out of a baby food jar, but I assure you my kitchen started to smell amazing in seconds. I also was very generous with the curry, because I like it hot!

Once you dump the coconut juice, chicken broth, carrot, lemongrass, fish sauce, lime zest and juice, and grated ginger you just let it simmer for 20 min and let your kitchen turn into a Thai restaurant. Take it off the heat and add the noodles to let them slowly soften.
Stir in chopped cilantro, taste and adjust seasoning, and bam! You have your Thai Curry Soup!

This recipe was awesome, and you can swap the chicken for another protein if you want or even tofu or maybe mushrooms! I now have a serious affection for cilantro and curry after this dish.
