This weeks meal originally came from my head... until I realized that it had been discovered and created a million times over already... damn. Anyways, this week I made zucchini pizza boats!!!! They are super simple, and very healthy. You can adapt this recipe with any toppings you want, but here are the basics: zucchini, pasta sauce (I used sundried tomato and olive...yum), mozzarella cheese (note it is fresh) and parmesan cheese. Cut the zucchini in half and hollow out the insides. Fill the insides with the pasta sauce and then sprinkle with mozzarella cheese and parmesan. I topped mine with some leftover sauteed mushrooms and onions from the polenta dish I made last week, and sprinkled them with dried basil too. Put them in a baking dish, and bake for 25-30 min on 400. Served it up with salad and ate it all up!!!! Next time, I think I will grill the hollowed out zucchini first to make it a little crispier. These would be an awesome addition to some zucchini pizza! (But then mine would not have been vegetarian!)
